When the sun’s out and the grill’s hot, we’re all about keeping things easy, bold, and packed with flavor. This shrimp taco recipe from our friend at Hughes Your Daddy BBQ checks every box. A crisp pineapple cucumber slaw, spicy Sriracha mayo, and perfectly grilled shrimp come together for a taco that hits just right after a long day—whether you’ve been on the water or just soaking up the weekend.
Grilled Shrimp Tacos with Pineapple Cucumber Slaw
A Hughes Your Daddy BBQ Recipe
Ingredients:
For the Tacos:

1 lb shrimp, peeled and deveined

Corn tortilla shells
-
Shredded Mexican cheese (optional)
For the Pineapple Cucumber Slaw:

2 cups chopped fresh pineapple (grilled or fresh)
-
2 cups thinly sliced green cabbage
-
3/4 cucumber, chopped
-
1/4 red onion, chopped
-
1/2 cup chopped cilantro
-
1 jalapeño, chopped
-
Juice of 1 lime
-
Salt and pepper to taste
For the Sriracha Mayo:
-
1 cup Duke’s Mayo
-
4 tablespoons Sriracha sauce
-
Juice of 1/2 lemon
-
1 teaspoon black pepper
Recipe:
Step 1: Prep the Shrimp
Peel and devein your shrimp, season with your favorite seafood seasoning (we like The Marlin) then keep them chilled while you prep the rest.
Step 2: Make the Slaw
Toss the pineapple, cabbage, cucumber, red onion, cilantro, and jalapeño in a bowl. Add lime juice, salt, and pepper to taste. Mix well and chill.
Step 3: Mix the Sauce
Stir together the Duke’s Mayo, Sriracha, lemon juice, and black pepper in a separate bowl. Set aside for drizzling.
Step 4: Fire Up the Grill
Heat your grill to medium. Lightly oil the grate or a cast iron pan. Grill the shrimp for about 1.5–2 minutes per side. Throw the tortillas on for a quick char—about 30 seconds.
Step 5: Assemble Your Tacos
Add shrimp to each tortilla, top with slaw, drizzle on that spicy mayo, and hit it with some cheese if you're feeling it.
